Quinoa Fried Rice
This is a great alternative to regular fried rice, with the quinoa adding extra protein and nutrition. The quinoa can even be made in advance to make dinnertime quick and easy. This one is on high rotation for my family.

Ingredients
- 1 cup raw quinoa or 3 cups cooked
- 1½ cups water (if cooking the raw quinoa)
- 1 tsp extra-virgin olive oil
- 4 free-range or organic eggs
- 4 rashers bacon, diced
- 1 tbsp extra-virgin olive oil
- 4 cloves garlic, finely grated
- 1 tbsp ginger root, finely grated
- 2 carrots, finely diced
- 1 cup frozen peas
- 6 spring onions, white part sliced; green part reserved for garnish
- 1 red capsicum, diced
- 3 tbsp tamari
- To serve
- 1 tbsp chilli oil (optional)
- 4 free-range or organic eggs, optional, for extra protein
Method
- If using raw quinoa, rinse well in a fi ne sieve for at least 1 min to remove bitter saponins. If you have time, soak in water with a splash of apple-cider vinegar for up to 12 hrs to improve digestibility.
- Place the quinoa in a pot with the water. Bring to a boil over medium high heat, then reduce to a gentle simmer. Cook uncovered until all water is absorbed, about 10–12 mins. Remove from heat, cover and let steam for 5 mins, then fluff with a fork.
- Heat a large pan or wok over a moderate heat. Whisk the eggs in a jug or bowl.
- Add 1 tsp olive oil to the pan, pour in the eggs and stir until cooked. Set aside.
- Add the bacon and cook for a few mins.
- Add 1 tbsp olive oil, then the garlic, ginger and vegetables and stir-fry for a few mins to soften.
- Add the cooked quinoa, egg and tamari and stir-fry together.
- Serve with chilli oil and a fried egg on top if desired.
