Raspberry & Blueberry Friands

Ingredients

  • 140g butter, plus extra to grease tin
  • 50g slivered almonds
  • 50g slivered almonds
  • 90g gluten-free flour
  • 175g icing sugar
  • 2 egg whites
  • 2 egg whites
  • Blueberries

Method


  • Preheat oven to 180°C.
  • Heat butter in a small saucepan over medium heat until it starts to brown.
  • Place the pan in a bowl of cold water to stop the cooking process.
  • Place dry ingredients in a bowl.
  • Beat egg whites until foamy and add to dry ingredients along with cooled butter and mix well.
  • Place in fridge for 2 hours.
  • Grease a friand tin with butter and divide the mixture between them.
  • Place a few berries into each 1 and bake for 13-15 mins or until they spring back when gently touched.
  • Tip: Toast the almonds in a pan over medium heat to add a slightly different flavour.
