Spicy Quinoa & Pomegranate Salad

Ingredients
- 1 tbsp olive oil
- 1 red onion, diced
- ½ tsp cumin
- ½ tsp ground coriander
- ½ tsp ground turmeric
- 1 cup uncooked quinoa
- 3 cups low-sodium vegetable stock
- 4 shallots, finely sliced
- 1 tin chickpeas, drained and rinsed
- Large handful coriander, roughly chopped
- Large handful parsley, roughly chopped
- ½ cup sliced almonds
- 1 pomegranate, arils
- Juice 1 large lime
- 2 tsp pure maple syrup
Method
- Heat some olive oil in a large pan over medium heat. Add the onion and cook for 2–3 mins until they soften and become translucent. Add cumin, coriander and turmeric and cook for another 2 mins.
- Stir in the quinoa and vegetable stock until well combined. Bring to a boil, then cover the pan with a lid and reduce the heat to low. Let it simmer for 20 mins or until the water is absorbed and the quinoa is fluffy.
- Remove from the heat and stir in the shallots, chickpeas, coriander, parsley, almonds, pomegranate arils, lime juice and maple syrup.
- Delicious served hot or cold.
