Spicy Quinoa & Pomegranate Salad

Spicy Quinoa & Pomegranate Salad

This vibrant spicy quinoa and pomegranate salad is packed with nutrients
to nourish and energise your body.

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, diced
  • ½ tsp cumin
  • ½ tsp ground coriander
  • ½ tsp ground turmeric
  • 1 cup uncooked quinoa
  • 3 cups low-sodium vegetable stock
  • 4 shallots, finely sliced
  • 1 tin chickpeas, drained and rinsed
  • Large handful coriander, roughly chopped
  • Large handful parsley, roughly chopped
  • ½ cup sliced almonds
  • 1 pomegranate, arils
  • Juice 1 large lime
  • 2 tsp pure maple syrup

Method


  • Heat some olive oil in a large pan over medium heat. Add the onion and cook for 2–3 mins until they soften and become translucent. Add cumin, coriander and turmeric and cook for another 2 mins.
  • Stir in the quinoa and vegetable stock until well combined. Bring to a boil, then cover the pan with a lid and reduce the heat to low. Let it simmer for 20 mins or until the water is absorbed and the quinoa is fluffy.
  • Remove from the heat and stir in the shallots, chickpeas, coriander, parsley, almonds, pomegranate arils, lime juice and maple syrup.
  • Delicious served hot or cold.
