Vegan Peach Crisp

Enjoy this vegan peach crisp made with ripe peaches, coconut oil and maple syrup — a delicious, refined-sugar-free summer treat.

Ingredients

  • Peach Base
  • 6 large ripe peaches, peeled & sliced
  • 2 tbsp arrowroot powder
  • 1 tbsp unrefined coconut sugar
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • Crisp Topping
  • 1 cup rolled oats
  • ¾ cup almond flour
  • ½ cup almonds, roughly chopped
  • ¼ cup unrefined coconut sugar
  • ½ tsp sea salt
  • ¼ cup pure maple syrup
  • ½ tsp cinnamon
  • 1/3 cup coconut oil, melted

Method


  • Preheat oven to 180°C fan-forced.
  • To make the peach base, place all the ingredients in a large mixing bowl and stir gently to combine. Spoon evenly into a large baking dish.
  • To make the crumble topping, place all the topping ingredients in a large mixing bowl and mix until well combined.
  • Place the topping on top of the peach mix and bake for 35–40 mins until the top is golden and peaches are bubbling. Allow to cool slightly before serving.
