Vegan Peach Crisp
Enjoy this vegan peach crisp made with ripe peaches, coconut oil and maple syrup — a delicious, refined-sugar-free summer treat.

Ingredients
- Peach Base
- 6 large ripe peaches, peeled & sliced
- 2 tbsp arrowroot powder
- 1 tbsp unrefined coconut sugar
- 1 tsp lemon juice
- 1 tsp vanilla extract
- Crisp Topping
- 1 cup rolled oats
- ¾ cup almond flour
- ½ cup almonds, roughly chopped
- ¼ cup unrefined coconut sugar
- ½ tsp sea salt
- ¼ cup pure maple syrup
- ½ tsp cinnamon
- 1/3 cup coconut oil, melted
Method
- Preheat oven to 180°C fan-forced.
- To make the peach base, place all the ingredients in a large mixing bowl and stir gently to combine. Spoon evenly into a large baking dish.
- To make the crumble topping, place all the topping ingredients in a large mixing bowl and mix until well combined.
- Place the topping on top of the peach mix and bake for 35–40 mins until the top is golden and peaches are bubbling. Allow to cool slightly before serving.
