Ingredients

  • 1½ cups gluten-free organic oats
  • 1 cup pear juice, freshly juiced from 2 pears
  • ¾ cup filtered water
  • 1 apple, cored & grated
  • 3 medjool dates, chopped
  • ½ tsp cinnamon
  • ¼ cup sunflower seeds, toasted
  • ¼ cup pepitas, toasted
  • ½ cup organic shaved coconut, toasted
  • 2 yellow peaches, stone removed, sliced

Method


  • In a glass container with a lid, combine the oats, pear juice, filtered water, grated apple, chopped dates and cinnamon.
  • Mix well, cover with the lid, and place in the refrigerator overnight.
  • Place the toasted sunflower seeds, pepitas and shaved coconut in an airtight container.
  • When ready to serve, divide the oats between two bowls, add the sliced peaches on top and sprinkle over the toasted seeds and coconut.
  • If only one portion is needed, leave the remaining oats in the airtight container and store in the refrigerator for the next morning. Consume within 4 days.
