This is my Middle-Eastern-inspired dressing which I use on anything from salads to roasted vegetables; it’s especially good on roasted cauliflower. I’ll keep a jar of this in the fridge and use it throughout the week.

Makes: 1 jar

  • 80g hulled white tahini
  • 90mL extra-virgin olive oil
  • 75mL lemon juice
  • 2 tbsp raw honey
  • ½ clove garlic, crushed
  • ½ tsp ground cumin
  • ½ tsp sea salt
  1. Add all ingredients to glass jar, put lid on and give it a good shake. Make sure you shake it until honey has completely broken up and combined with other ingredients.
  2. Place in fridge to allow it to thicken slightly then use as dressing on salad greens or roasted cauliflower.
