Salmon is one of the best sources of omega-3 fatty acids. Wrapping the salmon in foil allows the juices to infuse beautifully in the salmon, resulting in the fish literally melting in your mouth.

Oven-Baked Salmon with Lemon & Capers

Salmon is one of the best sources of omega-3 fatty acids, and this dish is the most delicious, melt-in-your-mouth way to enjoy it!

Ingredients

  • 2 tbsp olive oil
  • 1 clove garlic, crushed
  • 2 boneless salmon fillets
  • 1 tbsp fresh dill
  • 1 lemon, sliced
  • 2 tbsp capers
  • Salt & pepper, to taste

Method


  • Preheat oven to 180ºC fan-forced.
  • Place two large rectangles of foil or baking paper on a large baking tray and place the salmon in the middle of each one.
  • Rub each salmon fillet with garlic then sprinkle with dill and top with slices of lemon and capers. Season with salt and pepper.
  • Wrap the foil around the salmon and seal.
  • Bake in the oven for approximately 20 mins, or until cooked to your liking.
