Ingredients
- 1½ cups gluten-free organic oats
- 1 cup pear juice, freshly juiced from 2 pears
- ¾ cup filtered water
- 1 apple, cored & grated
- 3 medjool dates, chopped
- ½ tsp cinnamon
- ¼ cup sunflower seeds, toasted
- ¼ cup pepitas, toasted
- ½ cup organic shaved coconut, toasted
- 2 yellow peaches, stone removed, sliced
Method
- In a glass container with a lid, combine the oats, pear juice, filtered water, grated apple, chopped dates and cinnamon.
- Mix well, cover with the lid, and place in the refrigerator overnight.
- Place the toasted sunflower seeds, pepitas and shaved coconut in an airtight container.
- When ready to serve, divide the oats between two bowls, add the sliced peaches on top and sprinkle over the toasted seeds and coconut.
- If only one portion is needed, leave the remaining oats in the airtight container and store in the refrigerator for the next morning. Consume within 4 days.
